Eunice Elorm Ofori studied Renewable Natural Resource Management at the University for Development Studies in Ghana and subsequently completed a Master’s degree in Food Safety at Eduardo Mondlane University in Mozambique. During her studies, she developed a particular interest in food quality and its assessment using sensory, physicochemical, and microbiological approaches.From 2023 to 2026, she studied Sustainable International Agriculture at Georg-August University Göttingen. Her Master’s research focused on the development and analytical and sensory characterization of a plant-based food product enriched with algae. This work further strengthened her interest in food quality, secondary metabolites, and the chemical composition of plant-based products.
Since 2026, she has been conducting her doctoral research within the MultiStress project, focusing on the effects of plant stress on maize and grain quality. Her research applies metabolomics approaches to investigate changes in plant metabolism and their relationship to crop quality under different stress conditions. Her research interests lie at the interface of plant stress physiology, metabolomics, and food and crop quality, with a particular focus on understanding how environmental conditions influence the chemical composition and quality of plant-derived products.
